Good to know about marble

Natural stone, quarried in blocks. The softest and the most beautiful of the four, and the one that asks the most of you.

Know this first It etches. Lemon, vinegar, wine and some cleaners dull the polish where they sit, and no sealer prevents that: a sealer slows a stain soaking in, it does not make stone acid-proof. If you want a worktop that never changes, marble is the wrong choice and we will say so.

• Nothing else looks like it. The veining runs through the stone rather than across a printed face, so it carries on over a mitred edge and down a waterfall.
• Cool to work on. Marble sits cooler than the room, which is why pastry and chocolate have been worked on it for centuries.
• It ages rather than wears out. Marble takes a patina, and a mark can be honed out years later.

Looking after it. Sealed on fitting and about yearly, wiped rather than left, and a board and a trivet in daily use.
